Kofi Oduro, originally from Ghana with Jamaican heritage, exclusively serves up the cherished family recipes from his West African upbringing at Asona Cuisine. The name "Asona" pays homage to his Ghanaian heritage and clan. After gaining experience in restaurants specializing in East African or North African cuisines, Kofi felt a calling to share the flavors of West Africa with a wider audience. Ghana is a country with diverse culinary traditions offering a rich and varied food culture. At Asona, Ghanaian favorites like the Corned Beef Stew and Red Red are served over Basmati rice with traditional slaw and either sweet plantains or potato wedges. The Chicken Mushroom Stew reflects a fusion of Jamaican and Ghanaian influences. Having grown up near the coast in Southern Ghana, Kofi developed a palate for fish and vegetables, with chicken considered a special treat. His main culinary inspirations come from his mother and sister. While traditional Ghanaian cuisine can be spicy, Kofi's dishes focus on rich flavors without overwhelming heat. Though for those craving spice, Shito, a common hot black pepper sauce in Ghanaian cooking, is offered on the side. The Jamaican Spice Bun is a beloved childhood treat infused with cinnamon, nutmeg, molasses, local beer, and Oregon cherries in place of traditional currants. Kofi says the enthusiasm of customers to explore these unique flavors has been “awesome!”
