Chef Blaise Aki is the culinary virtuoso behind Pacific Rim and Sushi where he skillfully blends his Hawaiian heritage with 35 years of culinary expertise. A Marine Corps veteran, Blaise transitioned to culinary school in Portland, Oregon after serving in the special ops during Desert Storm before relocating to Arizona during the early aughts. 

Since launching Pacific Rim and Sushi in 2021, Blaise passionately shares his culinary heritage drawing inspiration from his multicultural upbringing in Hawaii. As the oldest of seven, his mom (strategically) taught him how to cook, as a result he says cooking has always come easy.

His eclectic menu features Filipino, Thai, South American, Hawaiian, and Japanese flavors. Even his teriyaki burger is infused with the flavors of the Pacific Rim. The truck’s top-seller is the combo plate featuring three entrees of Korean kalbi beef, Chinese crusted chicken, and Japanese teriyaki beef – three countries on one plate!  Other specialties are the Lau Lau which is made like Kalua Pig but wrapped in taro leaves instead of banana leaves, steamed, and seasoned with Hawaiian salt. Haupia is a Hawaiian coconut pudding served for dessert. 

For Chef Blaise it is of paramount importance to share his culture with each bite which comes inherently infused with the Aloha spirit, making his food truck a cherished destination in Arizona.
