From Puebla to LA: Eloy Rodriguez Brings Family Recipes and Heartfelt Cooking to Heritage Kitchen LA

Eloy Rodriguez, who comes from a lineage of heritage cooks, graces the cover of our newsletter. While growing up in Puebla, Mexico, his parents owned a restaurant. He says his mother’s mole rojo is still his favorite dish of all time. After more than a decade of working in LA’s food trucks, Eloy was determined to set out on his own. Five years ago, he opened Heritage Kitchen LA, a food truck where dishes are cooked from the heart with recipes based on his own family’s traditions.

At Heritage Kitchen LA, Eloy cherishes the exchanges he has with his guests and considers them like extended family. With every dish he produces, Eloy challenges the belief that food trucks are inferior to restaurants. He serves healthy salads, sandwiches, and bowls that are made with seasonal local produce alongside the craveable comfort foods. The Nashville Fried Chicken Sandwich receives top marks from its guests; a double-dredged chicken breast fried crisp on the outside and juicy on the inside, dipped in a spicy sauce, and served on a brioche bun adorned with garlic aioli, onion, and pickles.
