Sanjay Patel was born in North India, grew up in Panama, and worked in Miami before settling in Los Angeles as a personal chef to the glitterati. While he knows how to prepare many different types of cuisines, his food truck is devoted to foods from home. When Bollywood Bites opened in 2009, Sanjay found a market for his unique take on traditional and vegan Indian street.
