For Alok Agarwal and his son, Sid, food is both a cultural journey and a tether to home. It is no surprise that Maharaja Spice is an authentic family affair. Both father and son left a cozy job in Boston and an undergraduate in neuroscience respectively to fulfill a lifelong dream of cooking Indian dishes from home, on wheels. The Burlington food truck is staffed by siblings, relatives, and friends – a family gathering within one small trailer. As for the dishes, authenticity is the bottom line. Recipes are experimented on for months in the central kitchen before their aromas waft through the streets. Alok is so adamant about capturing the flavors of home, his suitcases overflow with fresh, aromatic spices after trips to India. Other ingredients, like biryani rice and famous Ratnagiri mango pulp, are specially imported. From their sell-out chicken popcorn to their two-day marinated chicken biryani, Maharaja Spice is dishing out genuine Indian flavors you will find nowhere else.
