Paisani
The Story
Born from college cookouts and Italian American households, Paisani was co-founded by lifelong friends Matthew Minichiello and Ryan Palmer after recognizing a missing piece in Boston’s food truck scene. Launched in 2022, the truck serves Italian sandwiches rooted in family tradition, including the Drunken Parm, and gained national exposure on The Great Food Truck Race all while Matt and Ryan remain hands-on at the window every day.
