The Story
Chef Blaine Baggao builds the menu at Adobo around smoke, heat, and the flavors he grew up with, pulling from both his Filipino roots and New Mexico background. His cooking has even landed him on Netflix, but the focus here stays on what’s coming off the line. It starts with things like green chili cheese fries topped with queso, hatch chili, cilantro, and lime crema, then moves into dishes like cherry smoked pork belly over brussels sprout hash or smoked carnitas that show up in tacos and rice bowls with lime fig jam and chicharrons. Everything is built with intention. From its food truck roots to its brick and mortar in Denver now, the highly lauded Adobo is a staple in the Colorado food scene.
