The Story
From degree to food truck, American Seoul Food is the result of founder James Park betting on his cooking after graduating in 2020. Instead of going the traditional route, he built a truck around the recipes he grew up with, bringing Korean food to Colorado one plate at a time. His menu pulls from family influence and familiar staples, served in a way that’s approachable whether you’ve had Korean food before or not. From day one, the goal has been simple. Share the food, see people enjoy it, and keep it moving. What started as a post-grad pivot has turned into a steady local following, with plans to keep growing from the truck to whatever comes next.
