Lenin Costas was born to share the flavors of Peru. Growing up in Lima, his grandmother kept one eye on his cradle and the other on the stove at her restaurant, where she served up dishes that brought people together. When Costas arrived in New York at 16, he knew he wanted to carry on that tradition. Since launching his first pop-up in 2017, he’s been known for bold, authentic flavors - from citrusy ceviche to savory Peruvian chicken and flavorful rice dishes. Today, he’s earned the name Don Ceviche, but his menu celebrates the full range of Peruvian classics.
