The Story

In Italian impasto means dough. At the Impasto food truck, savory wraps are made exclusively from house fermented sourdough griddled to peak crunchiness. For the husband-and-wife chefs, Joe, and Shawna and Polidori, it was important to translate their fine dining Italian experience into a more accessible concept. Shawna met Joe working as his sous chef. They launched their business in 2016, and 2017 was their first service. 

About her husband, Shawna explains that he is stereotypical Italian, he loves nothing more than to feed people! The house flatbreads teem with fresh Italian cheeses, scratch-made sauces, and high-quality proteins masterfully prepared, and are always cooked to order. The Grilled Chicken Impasto has been the number one seller since day one; succulent grilled chicken, roasted red peppers, piquant arugula, and a signature spicy aioli. 

Impasto’s thesis is that healthy and delicious food should not be out of reach, it should be approachable and affordable. The pair has leveraged their family connections in Florida and have developed a market there for their trucks as well. Back in Michigan, they have recently opened a brick-and-mortar location that will serve as their commissary and catering kitchens.
